

The wine of special vintage is the best among the best. Grapes on the vine ripe a long time, sugar levels are high and when the grapes are attacked by noble rot, it is vintage time for wine Kolednik brand - late vintage. In some years, we leave on the vine the grapes of Laski Riesling, at some other time Sauvignon or even Yellow Muscat. All depends on the quality of the wine-growing year and the health status of the grapes during the regular vintage. With the late vintage wines we experience an extraordinary harmony between the quantity of alcohol, acid and sugar. The richness of taste and flavor is very nicely complemented by the characteristics of overripe grapes and noble rot.
Already the word selection says a lot about the wine quality. We carefully select and pick grapes, which have long been ripening on the vine. We remove the inappropriate parts of clusters or even whole clusters. We process only the best-selected grapes into the predicate wine of the selection level. There is a good deal of sugar, therefore we leave that only a part of sugar ferments into alcohol. The selections are almost as a rule in the category of semi-sweet or even sweet wines. The richness of flavor is a combination of the primary varieties of flavorings and the flavoring of a predicate. We particularly perceive many scents of overripe grapes and the noble rot.
If we leave the grapes on the vine until November or even longer, we may pick the grapes for the quality of the grape selection. Specially selected particular grapes or parts of clusters are processed separately. Overripeness and noble rot, which attacks grapes, give the wine a special character. There is enough sugar so that we produce sweet wine almost as a rule. Strongly overripe grapes contain much sugar. The concentration of sugar in grapes is almost exclusively due to the loss of water. Many shades of honey in the aroma, noble rot, and full, sweet and harmonic flavor are the characteristics of the wine of the grape selection.
If we leave the grapes on the vine so long that there are low temperatures, we can also produce Ice wine. Due to the crystallization of water, there is an extremely high concentration of sugar, as well as all other components in the grapes. At the lowest temperature, we perform vintage of grapes and quickly squeeze the grapes, without grinding. The concentrate of grape juice is thus squeezed from grapes, while the crystals of frozen water remain in the grape. Due to the extremely high sugar levels of must, the Ice wine is typically a sweet wine. The amount of sugar in the wine can be up to 300 g/l. The characteristic scent of a concentrated must is transferred also to the wine. Especially the extremely sweet taste creates the perfect harmony of the wine.
Dry grape selection is processed during extremely nice dry and warm autumns, preferably winters. The sugar concentration must reach a minimum of 154 oOe of sugar, which can only be achieved with a long ripening of grapes on the vine. The concentration of sugar is obtained due to the evaporation of water from the grape skin. The wine of the dry grape selection usually involves a very large residue of unfermented sugar, even over 200 g/l. The scent and taste with wine of the dry grape selection are extremely consistent. The distinctive scent of dried-up and sunburnt grapes and the extremely rich and sweet flavor are the main characteristics of wines of the dry grape selection. The wine is recommended as an independent wine at the end of the festive lunches or dinners.
